How can I find out which version of udf my partition has been formatted? I have usb-stick that has been working fine and I would like to use same settings for other stick.

you should use gnu ddrescue instead. Much easier and better for damaged harddrives.

The latest version in sourceforge is something that works very very fast compared to other versions.
With these softwares there is also support for ext-filesystems and even more. They should be definitely installed in srcd.
